Grilled Cardoon Ribs

Long cardoon ribs boiled until tender, thoroughly dried and grilled with a generous coating of oil, salt and pepper.

  1. Step 1

    Gather the ingredients: 500 g trimmed cardoon ribs, tough strings removed; 3 tablespoons olive oil; Salt and black pepper; Water for boiling.

  2. Step 2

    Discard the tough outer cardoon ribs and remove all strings from the tender ones. Leave the ribs in long palm-length sections, about 15–20 cm. Boil in salted water for about 30–45 minutes, or longer if needed, until tender all the way through.

  3. Step 3

    Drain thoroughly and dry the ribs very well with a clean cloth or paper towels. Brush generously with the olive oil and season with salt and black pepper.

  4. Step 4

    Heat a clean grill to medium-high heat. Lay the ribs across the grate, using a grill basket if necessary. Grill for about 8–12 minutes, turning carefully until lightly browned on both sides. They are already cooked through, so avoid drying or charring them. Serve hot, by themselves or beside steak or grilled fish.
