Upright Grilled Artichokes

Tender whole artichokes grilled upright with only olive oil, salt and pepper, until the outer leaves char and the hearts soften.

  1. Step 1

    Gather the ingredients: 4 small tender artichokes; 4 tablespoons olive oil; Salt and black pepper.

  2. Step 2

    Choose small tender artichokes. Rinse them, trim the pointed tops and cut the stems flush with the bases, leaving the other leaves attached. Gently spread the leaves so the seasoning can reach between them. Remove any fibrous choke carefully if present, without separating the head.

  3. Step 3

    Rub about half the olive oil between the leaves and over the artichokes, and season with salt and pepper. Prepare a grill over moderate, steady embers or moderate gas heat, with no flames reaching the food.

  4. Step 4

    Stand the artichokes upright on the grate. If they will not stand securely, pass a metal skewer through the bases of two or three to support them together. Grill for about 35–50 minutes, moving away from excessive heat as necessary. Brush with the remaining oil about halfway through.

  5. Step 5

    Continue until the outer leaves are charred and a small knife enters the heart easily. Move to a cooler part of the grill if the outside chars before the centre softens. Remove the skewers and serve hot. Discard the charred outer leaves and tough fibres, and eat the tender inner leaf bases and heart.
