Flour-Fried Large Zucchini Ribbons
Large zucchini peeled and cut into long broad strips, salted and firmly squeezed, then fried in a light flour coating.

Step 1
Gather the ingredients: 1 very large zucchini, about 1 kg before peeling and removing the seedy centre; About 1 teaspoon salt; About 70 g plain flour; About 700 ml suitable frying oil, or enough for the pan; only part is absorbed.
Step 2
Peel the large zucchini, halve it lengthwise and remove the central pith wherever it contains seeds. Cut the flesh into long, thin strips about 1.5–2 cm wide and 3–4 mm thick.
Step 3
Salt the strips, place in a colander over a bowl and refrigerate for several hours, about 3 hours for this adaptation.
Step 4
Just before frying, gather the strips in both clean hands and squeeze firmly to expel the remaining water. Toss them in flour, separating the strips with your fingers. Shake in a sieve to remove all loose flour.
Step 5
Heat abundant oil to about 175°C. Fry the floured strips immediately in small batches for about 3–5 minutes until the thin coating is fully cooked and pale golden. Separate gently with a slotted spoon, drain and serve hot.
