Green Beans with Cream Sauce and Fried Bread
Tender green beans lightly sautéed in butter, covered with a modest cream-based white sauce and bordered with pointed oval pieces of fried bread.

Step 1
Gather the ingredients: 500 g tender green beans; 30 g butter: 15 g for the beans and 15 g for the sauce; 10 g plain flour; 200 ml cream, about 15% fat; A little hot water, only if needed to thin the sauce; 4 small slices white bread, about 80 g, crusts removed; About 30 ml olive oil for frying the bread; Salt and black pepper; Water for boiling.
Step 2
Trim the beans and remove any strings. Boil in lightly salted water for about 6–9 minutes, until tender but still green. Drain well. No soda is needed.
Step 3
Melt 15 g butter in a small saucepan and stir in the flour. Cook gently for a minute without browning, then gradually whisk in the cream. Simmer gently, stirring, for about 3–5 minutes until smooth and flowing. Add a little hot water if needed so the sauce pours easily; keep the coating modest rather than thick and heavy.
Step 4
Cut the bread into pointed oval shapes resembling almonds. Heat a shallow layer of olive oil in a frying pan and fry the bread on both sides until golden, about 1–2 minutes per side. Drain briefly on absorbent paper.
Step 5
Melt the remaining 15 g butter in a wide pan and toss the drained beans briefly over gentle heat, just enough to coat them without browning heavily. Season with salt and pepper. Transfer to a warm dish, pour the flowing cream sauce over them and arrange the fried bread shapes around the edge. Serve at once.
