Zucchini Sformato with Sweetbreads

A smooth zucchini and Parmesan ring cooked in a water bath, served hot with a delicate sweetbread ragout in the centre.

  1. Step 1

    Gather the ingredients: 600 g zucchini; 40 g grated Parmesan; 4 eggs; 1/4 medium onion, finely chopped; 20 g celery, finely chopped; 30 g carrot, finely chopped; 1 tablespoon finely chopped parsley; 2 tablespoons olive oil; 105 g butter: 60 g for balsamella, 5 g for the mould and 40 g for the ragout; 45 g plain flour: 20 g for balsamella and 25 g for coating sweetbreads; 400 ml whole milk; 300 g small lamb sweetbreads, professionally cleaned and trimmed for human consumption; 50 ml Marsala; 50 ml prepared meat jus; Salt and black pepper; About 100 ml water for the zucchini, plus hot water for the water bath.

  2. Step 2

    Finely chop the onion, celery, carrot and parsley together. Warm the olive oil in a broad pan and cook this mixture until lightly coloured, about 6–8 minutes. Add the zucchini cut into small pieces, salt and pepper, and cook until lightly browned, about 8–10 minutes. Add water gradually and cook for another 10–15 minutes until tender. Lift the vegetables out without excess liquid and press through a fine sieve. Let the puree become lukewarm.

  3. Step 3

    For the balsamella, melt 60 g butter with 20 g flour, stirring until the flour starts to colour. Add the milk gradually while stirring, then simmer for at least 5 minutes until creamy. Let become lukewarm. Mix the zucchini puree with the Parmesan and eggs, then incorporate the balsamella. Do not taste after adding raw eggs.

  4. Step 4

    Butter a smooth ring mould of about 1.5 litres with 5 g butter and pour in the mixture. Set in a deep roasting pan and add hot water halfway up the mould. Bake at 160°C for about 45–60 minutes until set with a slight wobble and at least 74°C in the thickest part. Keep water out of the filling.

  5. Step 5

    While the ring cooks, prepare its sweetbread ragout. Pat the professionally prepared small lamb sweetbreads dry, leave whole and coat well in the remaining 25 g flour, shaking off loose excess. Melt the remaining 40 g butter in a frying pan. Add the sweetbreads, salt and pepper and brown gently on all sides for about 10–15 minutes, until at least 72°C in the centre. Lower the heat if the flour colours too quickly.

  6. Step 6

    Add the Marsala and prepared meat jus to the cooked sweetbreads, bring to a brief boil and turn through the sauce. Keep hot while the sformato finishes. Rest the cooked ring for about 5 minutes, loosen gently and unmould onto a warm platter. Fill its centre with the hot sweetbread ragout and serve immediately.
