Spinach and Rice Pita Bites

Wilted spinach is folded with cooked rice, couscous, feta, ricotta, parsley and paprika. Serve small spoonfuls on crisp pita triangles.

Method

  1. Step 1

    Weigh the rice and instant couscous dry. Cook the rice in 1.2 litres boiling water for its packet cooking time until tender, then drain well. In a heatproof bowl, pour the remaining 270 ml boiling water over the couscous, cover and leave for its full packet standing time, about 5–10 minutes, then fluff.

  2. Step 2

    Wash and chop the spinach. Heat the olive oil in a wide pan over medium heat, add the spinach and paprika and cook for 2–3 minutes until wilted, then stir until excess liquid evaporates.

  3. Step 3

    Wash and chop the parsley. Fold the spinach, rice and couscous with the ricotta, crumbled feta and parsley off the heat.

  4. Step 4

    Heat the oven to 200°C. Split the pita and cut into small triangles; bake for 4–6 minutes until crisp. Spoon small mounds of topping onto the pita immediately before serving in ten portions of several small bites each.
