French-Style Peas with Onion
Fresh peas simmered with finely sliced browned onion and a light butter-and-broth sauce, flavoured with lettuce hearts that are removed before serving.

Step 1
Gather the ingredients: 500 g freshly shelled peas; 30 g onion, sliced very thinly; 30 g butter; 5 g plain flour; 250 ml prepared meat broth, plus a little more if needed; 1 small whole lettuce heart, or 2 very small hearts; Salt and black pepper; Optional: up to 1/2 teaspoon sugar, only if the peas need it.
Step 2
Melt the butter in a saucepan, add the very thinly sliced onion and cook gently for about 8–10 minutes until well browned without burning. Sprinkle in the flour, stir, then gradually add the broth. Simmer for at least 5 minutes to cook the flour.
Step 3
Add the peas, season with salt and pepper and simmer gently for about 6–8 minutes. Add the rinsed whole lettuce heart at about halfway through the pea cooking time.
Step 4
Continue to simmer gently for another 6–10 minutes until the peas are tender and the sauce is light and fluid. Add a little broth if it becomes too dense. Taste and, only if needed, add a small amount of the optional sugar so the sweetness remains subtle.
Step 5
Lift out and discard the cooked lettuce heart before serving. Serve the peas hot with the sliced onion and their light sauce.
