Green Pepper and Tomato Sauce

Long strips of peeled green pepper gently cooked with garlic, olive oil, butter and tomato sauce.

Steps

  1. Step 1

    Gather the ingredients: 2 large green sweet bell peppers; 1 tablespoon olive oil for blistering, plus 1 tablespoon for the sauce; 1 garlic clove, finely chopped; 15 g butter; 150 ml smooth ready-to-use tomato sauce; Salt to taste.

  2. Step 2

    Wash the peppers, open them and remove the seeds and inner ribs. Cut each pepper lengthwise into 4–5 broad strips.

  3. Step 3

    Heat 1 tablespoon oil in a frying pan. Cook the strips briefly, turning as needed, until their skins blister enough to peel. Let cool just enough to handle, then peel away the loosened skins while keeping the strips intact.

  4. Step 4

    In a clean pan, gently cook the chopped garlic with the remaining olive oil and butter until it just begins to colour. Add the peeled pepper strips and salt and cook briefly so they take on the flavour.

  5. Step 5

    Add the tomato sauce and cook gently just until the peppers are tender but still hold their shape, about 5–10 minutes depending on the earlier blistering. Serve warm with fully cooked boiled or simmered meat.
