Peas with Smoked Prosciutto
Fresh peas gently braised with diced smoked cured ham and a little butter, with young onion removed before serving.

Step 1
Gather the ingredients: 500 g freshly shelled peas; 1 small young onion, halved lengthways; 50 g smoked cured ham with some fat, cut into small dice; 2 tablespoons olive oil; About 200 ml prepared meat broth, added as needed; 15 g butter; Black pepper and salt only if needed.
Step 2
Warm the olive oil in a saucepan. Add the two young-onion halves and diced smoked cured ham. Cook gently for about 6–8 minutes, stirring the ham, until its edges wrinkle and the fat softens without burning.
Step 3
Add the peas and black pepper. Stir for a minute to coat them in the fat. Add a little broth and simmer gently, partly covered, for about 12–18 minutes until tender, adding more broth in small amounts as needed. Stir in the butter during cooking.
Step 4
Remove both onion halves and any loose onion pieces. Taste before adding salt, since the ham and broth may provide enough. Serve the peas hot, alone or as a side dish.
