Method
Steps
Step 1
Trim fins from THREE fresh brook trout, draw by the gills and wipe, retaining heads and tails. Put in a sautoire with 14 g butter, TWO tablespoons vinegar, ONE small tarragon branch, ONE parsley branch,59 mL white wine, ONE teaspoon salt and TWO saltspoons white pepper. Bring slowly to the boil; continue controlled cooking if needed until the thickest fish reaches 70°C.
Step 2
Rapidly chill the fish and its clean seasoning liquor to at most 4°C, keeping the fish in the same seasoning rather than cooling passively on the table.
Step 3
Prepare FULL No 2272 ONCE. Sieve the YOLKS of TWO hard-boiled eggs into a bowl set over clean external ice; whites are not used. Add HALF teaspoon Dijon mustard, SIX chopped tarragon LEAVES, ONE finely chopped mint LEAF, HALF teaspoon freshly chopped parsley, THREE saltspoons salt, HALF saltspoon cayenne and the SEPARATE TWO tablespoons sauce vinegar. Whisk ONE minute.
Step 4
Add 89 mL COLD olive oil DROP BY DROP while whisking briskly. Gently mix in ONE tablespoon capers and transfer to a cold sauce bowl. Keep the cooked-egg sauce at most 4°C. External ice is not an edible ingredient; its quantity is unspecified.
Step 5
Dress cold trout on a cold dish lined with a clean food-safe folded cloth. Add a LITTLE parsley greens and serve the same No 2272 sauce COLD and SEPARATELY, not poured over the fish. Sauce output and individual allocations remain unmeasured.
