Fresh Peas Old Style

Fresh peas simmered with lean salt pork, lettuce and leeks, then lightly thickened with butter and flour.

Method

Steps

  1. Step 1

Cut two ounces of lean raw cured unsmoked salt pork into small squares and finely chop one white onion. Put in a saucepan with one teaspoon of melted butter and fry until golden.

  2. Step 2

Add one pint of fresh shelled peas and half a pint of prepared white veal stock. Tie six washed green lettuce leaves and two cleaned leeks into a bundle and add to the pan. Season with half a teaspoon each of salt and sugar and two saltspoons of pepper.

  3. Step 3

Cover and boil gently for forty-five minutes, until the peas are tender and the pork is thoroughly cooked, checking that the mixture reaches at least 165°F. Remove and discard the lettuce and leek bundle.

  4. Step 4

Mix the separate tablespoon of butter with one teaspoon of flour on a plate. Add this mixture little by little to the peas, tossing over the heat until the flour is cooked and the sauce is lightly thickened. Transfer to a vegetable dish and serve hot.
