Cold Roast Pork Arista
A bone-in pork loin sparingly studded with garlic, rosemary and cloves, roasted without added fat and served cold.

Step 1
Gather the ingredients: 1 bone-in pork loin with its ribs attached, about 3 kg; 3 garlic cloves, cut into small slivers; 2 small rosemary sprigs, broken into small clusters; 3 whole cloves; Salt and black pepper.
Step 2
Heat the oven to 180°C. Make small slits in the pork loin and insert the garlic slivers, small rosemary clusters and the three cloves, spreading them out and using the aromatics sparingly. Season with salt and pepper. Put in a roasting pan, rib side down, without adding butter or oil.
Step 3
Roast for about 2½–3 hours, starting to check sooner if the joint is narrow, until the thickest meat reaches at least 71°C. Measure away from the bones in several places; size and shape determine the time. Rest for about 15–20 minutes. Remove the whole cloves and any loose hard fragments before serving.
Step 4
For the cold version, lift the cooked loin meat from the ribs while warm, divide into several smaller pieces and spread in shallow containers. Refrigerate promptly, within 2 hours, at 4°C or colder rather than cooling the entire large roast on the counter. Allow about 4–5 hours, or until cold throughout. Slice the cold pork across the grain and serve. Keep refrigerated and eat within 2–3 days of roasting.
Step 5
The rendered fat may be used for an optional side. For potatoes, parboil about 1 kg peeled potato chunks for 8–10 minutes, drain, toss with about 2 tablespoons of the hot strained pork fat and roast separately at 200°C for about 35–45 minutes until tender and golden. For greens, boil about 500 g trimmed greens until tender, drain well and sauté briefly in about 1 tablespoon strained pork fat. These are separate accompaniments and are not included in the main cold-pork portions or timing. Refrigerate any reserved drippings promptly and use within 2–3 days, or freeze.
