Savory Pain Perdu
Thin slices of stale French bread dipped in a savory egg, milk and cream mixture and fried in butter.
Method
Steps
Step 1
Beat the egg, milk, cream, salt, white pepper and freshly grated nutmeg together with a fork for about two minutes. Cut twelve quarter-inch-thick slices of stale French bread. Dip each slice in the egg mixture, letting excess drip back into the plate.
Step 2
Heat the measured two tablespoons of melted butter in a large frying pan. Arrange the bread in a single layer and fry for about three minutes on each side, until golden and the egg coating is fully set. Work in batches if needed, dividing the two tablespoons of butter among the batches. Continue cooking as needed until the centre reaches 160°F (71°C), checking through the side with a food thermometer without touching the pan.
Step 3
Transfer the fried slices to a clean hot serving dish and serve promptly. Discard any unused uncooked egg mixture.
