Method

Steps

  1. Step 1

Use ONE clean raw dressed young domestic goose, retaining the source six-pound PRETRIM basis without assigning a fixed dressed mass. Truss, season with ONE tablespoon salt and HALF teaspoon pepper, spread TWO tablespoons BUTTER over the breast and add TWO tablespoons water to the roasting pan. Roast at the selected modern 180°C setting for the NINETY-minute guide, turning frequently and basting occasionally with its own gravy, until the whole bird reaches 82°C in the thickest safe point.

  2. Step 2

For the complete separate sauce, core, peel and thinly slice FOUR green Granny Smith apples. Put in a saucepan with 57 g sugar, the provisional quarter teaspoon EACH salt and cinnamon, and 60 mL water. Cover, stir briskly while mashing finely, and cook TWENTY minutes or until mashable. Pass through a colander and cool promptly for separate service.

  3. Step 3

Untruss the bird onto a large hot dish. Skim fat from its own pan gravy and pour the remaining gravy OVER the goose; garnish with a little watercress. Serve applesauce SEPARATELY. Promptly cool any actual leftover meat in shallow covered vessels at or below 4°C for a separately tracked later use; no leftover quantity is promised.
