Pan-Roasted Veal Loin with Kidney
Veal loin rolled around its attached kidney, browned in a little oil and butter and gently finished with scant broth.

Step 1
Gather the ingredients: 1 boned veal loin joint with its kidney retained and professionally cleaned, about 1 kg total prepared weight; 1 tablespoon olive oil; 15 g butter; About 150 ml ready-to-use broth, used a little at a time; Salt, to taste.
Step 2
Ask the butcher for a boned veal loin with its kidney retained, with the kidney membrane and tough central ducts trimmed away. Keep refrigerated until preparation. Roll the loin compactly around the kidney and tie with food-safe cotton kitchen string.
Step 3
Choose a heavy casserole that holds the joint snugly. Heat the small amounts of oil and butter, add the veal and brown on every side over moderate heat. Lower the heat and cover loosely. Cook gently, turning regularly; season with salt about halfway through the expected cooking time.
Step 4
Add the broth a few spoonfuls at a time and continue gentle cooking for about 75–100 minutes in total after browning, adding only enough to prevent scorching. Check both the kidney at the centre and the surrounding rolled meat reach at least 72°C. Remove the lid toward the end so almost all liquid evaporates, leaving only a small amount of concentrated juice rather than a deep sauce.
Step 5
Rest for about 10 minutes, remove all string and carve across the roll so the kidney appears in the slices. Serve with the little remaining juice.
Step 6
If broth is unavailable, replace it with about 150 ml plain tomato sauce or 1 tablespoon tomato paste diluted in 150 ml water, added gradually in the same way and reduced nearly dry. For a stronger-flavoured version, add about 25 g finely chopped cured pork belly with the oil and butter before browning the veal.
