Sweet Crumpets

A milk-and-yeast crumpet cooked in one pan, finished in the oven and cut into six pieces.

Method

Steps

  1. Step 1

Gently warm the pint of milk in a saucepan. Remove from the heat, crumble in the half ounce of fresh compressed cake yeast and add the salt. Stir until dissolved. Stir in the four ounces of sifted flour until smooth and thickened.

  2. Step 2

Leave the pan in a warm place to rise, using thirty minutes as a guide. Stir in the three tablespoons of melted butter with a wooden spoon.

  3. Step 3

Heat the oven to 150°C conventional. Lightly butter a large oven-safe frying pan and heat it over low-to-medium heat. Pour in the entire preparation. Cook for about five minutes, until the underside is golden and the cake is set enough to turn; turn the whole crumpet carefully with a broad spatula.

  4. Step 4

Put the same pan in the oven and bake for about ten minutes, continuing until the centre is fully set and cooked through with no wet batter remaining. Protect your hands from the hot pan handle.

  5. Step 5

Remove the crumpet, cut it into six equal pieces and serve warm.
