Roast Turkey with Filippini Cranberry Sauce
An oven-roasted whole turkey with strained pan gravy and separately served cranberry sauce. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0067. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use a clean, commercially oven-ready, unstuffed turkey rather than reproducing the historical ice-pick sinew extraction, singeing and drawing at home. Identify food-grade larding pork before use; its quantity is left unmeasured. Roast until both the thick breast and thigh areas away from bone reach at least 82°C, a modern thermometer endpoint that supersedes the printed one-hour-twenty-minute guide. Rest before carving. Prepare No. 68 sauce fully, cool promptly and refrigerate; serve it cold in a separate bowl and do not adopt the book’s months-long cool-place storage claim. All measured No. 68 sauce ingredients are embedded rather than leaving an opaque recipe reference. Limites : Bird breed, geometry and exact larding-pork product/amount affect cooking. This adaptation specifies an unstuffed bird; any stuffing would require its own safe endpoint. No safe total roast duration, servings or cranberry surplus volume is invented. A photo cannot verify 82°C. No physical trial is claimed.
Method
Steps
Step 1
Prepare the entire No. 68 cranberry sauce batch: wash and sort cranberries, discarding spoiled or overripe fruit but retaining sound floaters; combine with its measured cold water, bring to a boil, add its measured sugar, then gently boil for about thirty minutes while mashing and stirring. Cool promptly in clean shallow containers and refrigerate until thoroughly cold.
Step 2
Pat the oven-ready unstuffed turkey dry with clean paper. Truss as needed for even roasting. Season all over with the measured salt and lightly filled white pepper. Cover the breasts with identified thin larding-pork slices, without inventing a source weight, and put four tablespoons cold water in the roasting pan.
Step 3
Roast the unstuffed turkey, basting with pan juices and turning the pan as needed for even colour. Treat the printed one hour twenty minutes only as a historical guide. Continue until a clean thermometer reads at least 82°C in both the thick breast and thigh areas away from bone. Rest briefly before removing the truss and moving the turkey to a clean warm platter.
Step 4
Skim excess fat from the pan gravy, strain the gravy over the turkey, and serve a separate clean bowl of the chilled cranberry sauce. Promptly refrigerate surplus sauce and cooked leftovers.
