Grilled Veal Kidney with Anchovy Butter

Opened veal kidney marinated with butter, grilled and finished hot with a small ball of anchovy butter.

    Gather the ingredients: 1 food-grade veal kidney, about 650 g within the source range of 600–700 g, professionally opened and trimmed of outer fat, membrane and tough white core; 60 g butter: 30 g melted for the marinade and 30 g softened for finishing; 1 large or 2 small salt-packed anchovies, about 15 g cleaned fillets; Salt and black pepper; Cold water for the preliminary soak.

  2. Step 2

    Keep the professionally cleaned, opened kidney cold. Put it in a covered bowl of cold water in the refrigerator for about 20 minutes, then drain and pat dry. This cold preparation replaces the historical hot-water soaking and cooling step; the kidney remains uncooked until its final grilling.

  3. Step 3

    Use clean food-safe metal skewers lengthwise and across to hold the kidney open and fairly flat. Brush with the melted 30 g butter, cooled to lukewarm, and season sparingly with salt and pepper. Cover and refrigerate at 4°C or colder for 1–2 hours.

  4. Step 4

    Rinse and dry the salt-packed anchovies, remove heads and bones if using whole fish, and finely chop the edible fillets. Crush them with the flat of a knife, mix with the separate 30 g softened butter and shape into a small ball. Keep chilled until serving.

  5. Step 5

    Heat a clean grill to moderate heat, about 180–200°C, with a cooler area. Grill the opened kidney, turning carefully, for roughly 15–25 minutes or until at least 72°C in every thick lobe; move to cooler heat if the surface browns too quickly. Do not judge doneness from colour alone.

  6. Step 6

    Transfer to a warm dish, remove every skewer, and immediately spread the anchovy-butter ball over the hot kidney so it melts. Slice across the lobes and serve promptly with the buttery juices.
