Potatoes Windsor

Step 1
Peel and wash four large sound potatoes. Use a Parisian potato scoop to scoop as many pieces as possible; size and count depend on tool and potatoes.
Step 2
Cover pieces with water in a small saucepan, add one teaspoon salt and boil for the printed ten minutes, checking tenderness. Drain thoroughly.
Step 3
Return potatoes to the same pan with about 14 g butter, provisional finishing salt and white pepper and juice of half a lemon. Mix gently for one and a half minutes without breaking, then serve in a deep dish.
