Simmered Pork and Cucumber with Cilantro

Gently simmered pork loin is combined with finely shredded cabbage and diced cucumber. Serve on baguette toasts spread with yogurt, with cilantro and lime wedges.

Method

Steps

  1. Step 1

    Use raw boneless pork loin cut into 2 cm pieces. Place in a 20 cm saucepan with the 750 ml water. Bring to a gentle simmer and cook for about 10–15 minutes until a clean thermometer reads 71°C in the thickest pieces. Drain and rest on a clean plate for 3 minutes.

  2. Step 2

    Wash and finely shred the cabbage. Wash and finely dice the cucumber and chop the cilantro. Toss the cabbage and cucumber with 2 tablespoons olive oil, then fold in the warm pork.

  3. Step 3

    Wash and cut the lime into wedges. Slice the baguette, brush with the remaining tablespoon olive oil and toast in a pan for 1–2 minutes per side.

  4. Step 4

    Spread yogurt onto the baguette toasts, add the warm pork and finely cut vegetables and scatter with cilantro. Divide into eight portions and serve immediately with lime wedges.
