Airy egg, breadcrumb and Parmesan dumplings gently cooked in clear broth.

Method

Steps

  1. Step 1

    Gather the ingredients: 4 eggs, separated; 4 lightly heaped tablespoons very fine dry breadcrumbs; 4 lightly heaped tablespoons finely grated Parmesan; Nutmeg to taste; About 1.5 litres ready-to-use clear broth.

  2. Step 2

    Bring the broth to a gentle boil in a wide saucepan. Beat the egg whites to firm peaks.

  3. Step 3

    Fold the yolks gently into the whites. Sprinkle over the breadcrumbs, Parmesan and nutmeg and fold carefully to keep the mixture light; do not beat it flat.

  4. Step 4

    Drop the mixture into the simmering broth in small teaspoonfuls, leaving space for the dumplings to expand. Cook gently for 7–8 minutes until set and airy, checking that a larger dumpling reaches 74°C in the centre.

  5. Step 5

    Ladle carefully into bowls with the broth and serve immediately.
