Fennel and Mushroom Salad with Basil
Fennel, mushrooms and tomato are distributed over a serving dish with rocket and lettuce. Basil and oregano are included, with dressing spooned around the plate at the finish.

Step 1
Work methodically through trimming and cutting the fennel into workable pieces, followed by trimming and cutting the mushroom into workable pieces, and clear the work surface.
Step 2
Blend olive oil and red wine vinegar briefly to make a smooth, pourable dressing.
Step 3
After washing, drying, and finely chopping the basil, measuring the oregano accurately, trimming and cutting the rocket into workable pieces, and trimming and cutting the lettuce into workable pieces, add basil, oregano, rocket, and lettuce to the bowl during this toss.
Step 4
Distribute fennel, mushroom, and tomato across the serving dish, then add the dressing.
Step 5
Spoon any reserved dressing around the plate and bring the salad to the table promptly.
