Potatoes Parisienne
Many small golden potato balls, not diced potatoes.

Step 1
Peel six potatoes, scoop as many round pieces as possible with Parisian scoop, wash and drain balls. Record actual count and retain trimmings separately.
Step 2
Toss balls with melted leaf lard, salt and light pepper. Roast in brisk oven about thirty minutes, turning occasionally until all sides coloured and centres tender.
