Method

Steps

  1. Step 1

Heat milk/cream with split vanilla bean. Whisk SIX yolks with sugar, temper with hot dairy and gently heat while stirring to safe custard 74°C without boiling. Strain, rapid-chill to ≤4°C, churn and freeze; measure actual FINISHED vanilla ice cream, allocating only ONE PINT.

  2. Step 2

Make No2297 shells ONCE from six whites, salt, powdered sugar and vanilla; pipe/dry twenty-five minutes, rest ten, release after two-minute wet-paper contact and COUNT intact shells. Require twelve; if fewer, hold assembly rather than inventing another batch.

  3. Step 3

Whip two gills starting thick cream over external clean ice to stiff froth, add ounce sugar and vanilla drops, whisk one minute.

  4. Step 4

Allocate ONE PINT measured FINISHED No42 among twelve shells; join as SIX pairs. Pipe actual whipped cream over six pairs, keep frozen/chilled safely and serve six saucers.
