Roast Spring Lamb Leg with Mint Sauce
Unweighed spring-lamb leg roasted with lard and served with its strained gravy and separate mint sauce. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1378. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use a whole bone-in spring-lamb leg, plain lard and the already selected 63°C whole-cut endpoint, checked away from bone. Make the full mint sauce with plain white-wine vinegar, refrigerate and shake before separate service. Retain the heavy teaspoon salt; no lamb mass, gravy quantity or finished sauce portion is inferred. Limites : Lamb raw mass, age/product, oven heat, required extension, pan gravy, mint bunch and finished sauce portion remain unmeasured. Quart-title output and comparator 255 one-gill service are not inherited.
Method
Steps
Step 1
Prepare the full mint sauce ONCE. Wash and drain ONE bunch fresh mint, strip all leaves from stalks and mince EXCEEDINGLY finely. Mix with 85 g fine sugar,355 mL plain WHITE-WINE VINEGAR,240 mL cold water and ONE tablespoon salt. Transfer to a tightly covered food-safe jar and refrigerate; shake thoroughly just before service.
Step 2
Trim the small handle bone of ONE raw whole bone-in spring-lamb leg, purchase mass unspecified. Season all around with ONE HEAVY teaspoon salt and HALF teaspoon pepper. Spread TWO tablespoons melted plain lard over it and add TWO tablespoons water to the roasting pan.
Step 3
Roast for the ONE-hour source guide, turning and basting occasionally with its OWN gravy. Verify the 63°C whole-cut endpoint in thickest flesh away from bone, extending as needed; no exact oven setting or achieved outcome is implied by the source time.
Step 4
Dress the whole leg on a hot dish and garnish with a LITTLE watercress. Skim fat from the actual pan gravy and strain gravy OVER the leg. Shake the prepared mint sauce and serve an actual unmeasured portion SEPARATELY.
