Fig and Chestnut Coconut Crumble Cake
A soft coconut yogurt cake with figs and cooked chestnuts under a crisp, buttery crumb topping. Baked in a skillet and served in six dessert portions.

Step 1
Allow 35 minutes preparation, 50–55 minutes baking and 35 minutes cooling. Heat the oven to 175°C conventional / 155°C fan. Line the base and sides of a 23 cm ovenproof skillet at least 5 cm deep with baking paper. Divide flour into 180 g for cake and 60 g for topping; sugar into 100 g and 40 g; butter into 80 g softened and 40 g cold.
Step 2
Use fresh ripe figs. Remove their stems and weigh 200 g edible figs; cut into small wedges. Use 100 g fully cooked, peeled, unsweetened chestnuts, chopped coarsely. Reserve 30 g chestnuts for the topping. Stir full-fat canned coconut milk smooth before measuring 100 ml. Weigh egg without shells; use liquid vanilla extract.
Step 3
Rub the 40 g cold butter into the 60 g topping flour with fingertips. Mix in the 40 g topping sugar and 30 g reserved chestnuts, squeezing some mixture into rough crumbs. Refrigerate this topping while mixing the cake.
Step 4
Cream the 80 g softened butter and 100 g cake brown sugar for 3 minutes. Beat in the egg gradually and add the vanilla. Combine 180 g cake flour with the baking powder; fold into the butter mixture, alternating with coconut milk and yogurt, just until no dry flour remains.
Step 5
Fold the remaining 70 g chestnuts into the batter and spread it in the skillet. Arrange all the figs across the surface, pressing them slightly into the batter. Scatter the chilled crumb topping over the fruit, leaving small gaps.
Step 6
Bake for 50–55 minutes until the topping is golden and a skewer pushed through a gap into the central cake shows no wet batter. If the topping darkens first, cover loosely with foil and continue in 5-minute intervals until the centre is baked.
Step 7
Let the cake cool in the skillet for 35 minutes so the crumb sets. Serve warm, cutting or spooning six portions from the pan and dividing the fruit and topping evenly.
