Fried Eggs with Brown Butter and Vinegar
Twelve eggs in six individual dishes, finished with lightly browned butter and a teaspoon of vinegar. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0154. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use six heat-safe dishes suitable for the selected range or hob, protecting them from thermal shock. Cook the egg mixture until a food thermometer reads 74°C as Health Canada recommends for egg dishes (https://www.canada.ca/en/health-canada/services/general-food-safety-tips/safe-internal-cooking-temperatures.html); the historical three minutes may be too short. Brown butter separately without burning it and carefully mix in vinegar off strong heat to limit splatter. This modern endpoint may firm the yolks and is explicit rather than silently attributed to the source. Limites : Dish heat tolerance, actual egg setting time, browned-butter loss and yolk appearance are not verified. No eggs were cooked or tasted.
Method
Steps
Step 1
Lightly butter six suitable small heat-safe egg dishes. Break two eggs into each, keeping yolks intact. Set the dishes over an appropriate controlled heat source and cook; the printed three minutes are only a guide.
Step 2
Continue until the eggs reach 74°C as measured in the egg mixture under Health Canada’s guidance (https://www.canada.ca/en/health-canada/services/general-food-safety-tips/safe-internal-cooking-temperatures.html); this may take longer than the book’s three minutes and may firm the yolks.
Step 3
In a separate frying pan heat one and a half tablespoons melted butter until light brown, not burnt. Remove from strong heat, add one teaspoon vinegar carefully and swirl to mix. Divide the warm brown butter and vinegar evenly over the six egg dishes and serve promptly.
