Dice/wash/drain white celery branches. Boil in pint water and first salt measure twenty minutes, then drain well.
Step 2
Beat eight eggs with finishing salt, white pepper and milk for thirty seconds. Heat butter, add eggs and drained celery; stir while cooking about six minutes or until egg mixture reaches74°C. Serve hot.
