Oyster Broth in Cups

Six cups clear oyster liquor broth, with cooked oysters reserved for next-day stuffed shells. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1090. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use separately procured plain pure unseasoned oyster juice in addition to all natural liquor from the 36 oysters. Verify 74°C in oyster flesh, remove all oysters from the broth, and serve clear broth without optional butter or cream. Rapidly chill the cooked oysters at or below 4°C and keep six clean deepest shells separately for the documented next-day use/discard plan. Limites : Natural oyster liquor, actual extra-product composition, recovered broth, six cup volumes and next-day oyster/shell handling remain unmeasured. Source added liquids do not establish final output; no successful future 1102 service is claimed.

Method

Steps

  1. Step 1

Open thirty-six traceable fresh oysters, save ALL their natural liquor. Add oysters/liquor plus a SEPARATE extra pint oyster juice, pint water, four white celery branches, two parsley branches and seasonings; bring to boil and hold printed five minutes, verifying oyster pieces 74°C.

  2. Step 2

Skim scum, remove ALL celery and parsley and separate ALL THIRTY-SIX cooked oysters from the broth. Strain LIQUID ONLY into SIX clean cups and serve hot, without the optional butter or sweet cream.

  3. Step 3

Rapidly chill all 36 cooked oysters in a shallow covered food-safe vessel at or below 4°C for next-day use. Reserve six deepest equal-size cleaned shells separately. Keep a next-day use/discard plan; the historical “cool place” alone is inadequate.
