Baked Turnips in Light Cream Sauce

Small whole turnips simmered until tender and briefly baked under a thin milk sauce.

  1. Step 1

    Heat the oven to 180 °C toward the end of simmering. Peel the turnips, keeping them whole. Melt butter in a wide lidded oven-safe pan, add turnips, salt, pepper and sugar, then pour in one cup water.

    Cover and simmer gently, turning once or twice, about 45–60 minutes until a skewer enters easily but turnips hold their shape. If liquid evaporates early, add a splash of water. Lift turnips briefly from the pan.

  3. Step 3

    Whisk flour into the cold milk, then stir it into the simmering pan liquid. Cook 2–3 minutes until lightly thickened; loosen with a little water if needed. Return turnips, coat lightly, cover with an oven-safe lid and bake about 25–30 minutes until hot throughout and sauce is smooth. Serve whole with the sauce.
