Batter for Fritters

An airy sweet fritter batter made with milk, olive oil and separately whipped egg whites.

Method

Steps

  1. Step 1

Separate three eggs, keeping both their yolks and whites. Put half a pound of sifted flour in a large bowl with two tablespoons of olive oil, half a teaspoon of salt, one tablespoon of powdered sugar, the three yolks, half a gill of cold water, one gill of cold pasteurized milk and one teaspoon of food-grade vanilla essence.

  2. Step 2

Stir briskly with a wooden spoon for five minutes, until smooth. If not using immediately, keep the batter and reserved whites covered and refrigerated at 40°F or colder.

  3. Step 3

Just before using, beat the whites from the same three eggs to a foam. Fold them gently into the batter for one minute and use promptly for fritters that will be fully fried before eating. Do not taste the batter raw.
