Broiled Shad, Maître d'Hôtel
Broiled split shad dressed with the reviewed lemon-herb butter, parsley greens and six lemon quarters. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0194. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use the selected longitudinal half of a two-pound American shad before trimming. Inspect/remove remaining fine bones and verify 70°C in the thickest flesh after the eight-minute split-side and four-minute skin-side guides. Keep roe outside this dish. One complete No.7 butter batch is the documented working allocation; the historical passage names the butter without its amount. Limites : The two-pound whole-fish basis precedes trimming; edible weight of the purchased half, fine-bone removal, broiler heat, garnish and yield remain unmeasured. Whole small roe-shad branch is not selected and roe is not added.
Method
Steps
Step 1
Prepare one complete No. 7 maître d’hôtel butter batch: place approximately 21 g cool butter on a plate, add half teaspoon dry finely chopped parsley, quarter teaspoon dry finely chopped chervil, half teaspoon fresh lemon juice, provisional quarter teaspoon salt and eighth teaspoon white pepper. Mash thoroughly with a fork, cover and refrigerate until spreading on the hot fish.
Step 2
Use ONE fresh longitudinal American-shad HALF from the printed TWO-pound whole-fish alternative, not a whole small roe shad. Clean, wipe, pare and scale as needed; remove the backbone and inspect for remaining fine bones. Keep roe outside the dish. The source half-weight is before trim, not a fixed edible fillet weight.
Step 3
Season both sides with one teaspoon salt and an unmeasured very small amount of white pepper, then coat evenly with one tablespoon oil. Broil on moderate heat for the source's eight-minute guide on the split side and four-minute guide on the skin side, extending as needed until the thickest fish flesh measures at least 70°C.
Step 4
Dress the cooked half on a hot dish and spread the ONE complete prepared No.7 butter batch over it as the documented working allocation. Arrange a few clean parsley greens around and serve with exactly SIX lemon QUARTERS.
