Gooseberry Sauce

Fresh gooseberries in a warm milk sauce with lemon, butter and parsley.

Method

Steps

  1. Step 1

Heat one and a half tablespoons of melted butter in a small saucepan. Add two lightly filled tablespoons of flour and stir over the heat for half a minute.

  2. Step 2

Add two gills of hot milk, half a teaspoon of salt, one saltspoon of cayenne pepper and half a saltspoon of grated nutmeg. Stir continuously until boiling.

  3. Step 3

Add the separate half ounce of butter little by little and the juice of a quarter of a lemon. Mix well, strain through a fine conical strainer into another saucepan, then add half a teaspoon of freshly chopped parsley and keep warm.

  4. Step 4

While keeping the sauce warm, stem and wash one pint of fresh gooseberries. Put them in a quart of boiling water and boil for two minutes, then drain in a sieve.

  5. Step 5

Add the drained berries to the sauce, mix gently and serve warm.
