Mutton Loin Chops alla Finanziera
Mutton loin chops braised with chicken giblets, sweetbreads and mushrooms, finished with separately reduced white wine and strained, defatted juices.

Step 1
Gather the ingredients: 4 whole bone-in mutton loin chops, about 700 g total; 1 slice prosciutto containing fat and lean, about 40 g; 50 g butter, with up to 10 g extra only if needed during browning; 1 small carrot, about 60 g; 1 celery stalk, about 50 g; 4 parsley stems; Salt and black pepper; 100 g chicken gizzards, professionally cleaned for human consumption; 100 g chicken livers, professionally trimmed; 100 g small lamb sweetbreads, professionally prepared for human consumption; 100 g fresh cultivated mushrooms; About 500 ml ready-to-use stock; 1 teaspoon plain flour, about 3 g; Up to half a small glass dry white wine, about 100 ml, reduced separately to about 50 ml.
Step 2
Cut the cleaned gizzards, livers, sweetbreads and mushrooms into small pieces, keeping the gizzards separate. Tie the carrot, celery and parsley stems into a small bundle with food-safe string. Put the prosciutto slice, 50 g butter and vegetable bundle in the bottom of a heavy casserole. Lay the whole chops on top and season with salt and pepper.
Step 3
Brown the chops on both sides over moderate heat, about 10–15 minutes. Add the extra small piece of butter only if needed. Add the gizzards first and turn them in the fat for about 5 minutes; then add the liver, sweetbreads and mushrooms and cook until they also take on some colour, about 5 minutes.
Step 4
Add stock a little at a time, cover and simmer gently for about 1¼–1¾ hours, until the chops and gizzards are tender and all meat and giblet pieces reach at least 74°C. Stir around the chops carefully and add a little more stock if necessary to prevent drying.
Step 5
Mix the teaspoon flour with a little cool water, stir into the juices and simmer for about 3 minutes to lightly bind them. Separately boil the white wine in a small pan until its volume has reduced by half. Add this reduced wine to the casserole and simmer gently for another 3–5 minutes.
Step 6
Lift the chops, giblets, sweetbreads and mushrooms onto a warm serving dish. Remove the prosciutto and tied vegetable bundle, including every piece of string. Strain the remaining sauce and skim off excess fat, then pour it over the meat and offal and serve.
Step 7
For the veal version, replace the chops with one piece of veal fillet weighing about 600 g and add 200 g shelled peas. Use all the other measured ingredients and the same order of browning, giblet additions, stock braising, flour and separately reduced wine. Add the peas during the last 15–20 minutes of gentle cooking, check the fillet and offal reach 74°C, and retain the peas with the mushrooms and giblets when straining the sauce. Remove all string, slice the veal and serve with the sauce.
Step 8
For dried mushrooms, replace the 100 g fresh mushrooms with about 10 g dried mushrooms. Soak in hot water for about 20 minutes, drain, cut into pieces and add with the liver and sweetbreads.
