Swiss Cardoon Gratin

Preserved cardoon pieces baked with grated Swiss cheese, butter and cream.

Method

Steps

  1. Step 1

Preheat the oven to 350°F. Use one nominal pint can of plain heat-preserved cardoon pieces packed in water, rather than raw cardoons. Open the can and drain off all its packing liquid. Plunge the cardoons into enough boiling water to cover them for two minutes, then drain again.

  2. Step 2

Season the drained cardoons all around with the teaspoon of salt and half teaspoon of ground black pepper. Lightly butter a baking dish and arrange the cardoon pieces in it. Sprinkle the three tablespoons of grated Swiss cheese over them and dot with a few small pieces of the separate topping butter.

  3. Step 3

Pour the half gill of cream around the sides of the dish. Bake for about twenty minutes, until hot throughout and the cheese is melted and lightly browned. Remove with oven gloves and serve hot.
