Water-Based Hot Chocolate

A rich drinking chocolate made with water and whisked between two brief boils.

Method

Steps

  1. Step 1

    Gather the ingredients: 60 g plain chocolate, broken into small pieces; 200 ml water.

  2. Step 2

    Put the chocolate and water into a small heavy saucepan. Warm gently, stirring as it heats so the chocolate melts evenly without sticking.

  3. Step 3

    As soon as it first comes to the boil, remove from the heat and whisk vigorously for 5 minutes. Return to the heat just until it boils again, then pour into a heatproof cup and serve.

  4. Step 4

    For a lighter version, use 50 g chocolate with the same 200 ml water. For a much thicker version, use 80 g chocolate with the same water. Melt, briefly boil, whisk off the heat for 5 minutes and bring just back to the boil exactly as above.

  5. Step 5

    If desired, add a small pinch of ground cinnamon or about ¼ teaspoon vanilla extract while melting the chocolate. Use either flavour lightly; neither is required for the plain version.
