Shrimp Risotto

Rice cooked in a strained shrimp and vegetable broth, with a small portion of whole peeled shrimp added near the end.

  1. Step 1

    Gather the ingredients: About 300 g whole shell-on shrimp; 700 g risotto rice; Half an onion; 3 garlic cloves; 1 carrot; 1 celery stalk; 2 tablespoons chopped parsley; 4 tablespoons olive oil; 3 tablespoons plain tomato passata, or 1 tablespoon tomato paste; About 2.25 litres hot water, with extra if needed; 40 g butter; 70 g grated Parmesan; Salt and black pepper to taste.

    Finely chop the onion, garlic, carrot, celery and parsley. Cook in the olive oil until beginning to colour. Add the whole shrimp with salt and pepper, turning frequently until they turn pink-red. Add the passata or paste, then the hot water. Simmer briefly until the shrimp flesh reaches 74°C, then lift the shrimp out.

  3. Step 3

    Peel all the shrimp and remove the digestive veins. Reserve about one-quarter of the shrimp, choosing the largest, whole for the final addition. Pound or blend the flesh from the other three-quarters to a fine purée.

  4. Step 4

    Lightly crush the empty shells, return them to the cooking liquid and simmer for about 5 minutes. Filter through a very fine lined sieve, discarding every shell fragment and gritty residue. Press the vegetable solids and shrimp-flesh purée through a fine sieve into this broth. Keep hot.

  5. Step 5

    In a separate pan, cook the dry rice briefly in the butter, stirring until glossy. Add the hot shrimp broth a little at a time, stirring regularly and keeping enough liquid for even cooking.

  6. Step 6

    After a little more than half the rice cooking time, add the reserved whole peeled shrimp. Finish until the rice is just tender, about 16–20 minutes total, and the shrimp are hot throughout. Add Parmesan before serving. Keep the rice fairly dry but moist.

  7. Step 7

    The source also allows ready-to-use meat broth instead of water for a richer version. Replace the measured water with the same amount of broth and reduce added salt to taste; no other ingredient change is required.
