Broiled Devilled Duckling

Broiled Devilled Duckling Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2493. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Printed times are historical guides; record selected safe product, temperature and actual yield. Primary PDF physical p774 confirms printed No. 11 Devilled Butter; retain OCR “No. n” as raw witness only. Limites : Duckling mass remains unprinted; No11 raw-egg product must be pasteurized; 24-minute broil cannot prove 82°C. Primary PDF p774 resolves No11 printed numeral.

Method

Steps

  1. Step 1

Make No11 ONCE from embedded inputs and its reviewed full method: Soften the butter. Place it with the mustard, vinegar, Worcestershire sauce, salt, cayenne and pasteurized yolk in a clean bowl. Mix thoroughly with a spoon until uniform. Cover and refrigerate immediately; use according to the destination recipe. Measure actual FINISHED output/child aliquot, not assumed parent yield.

  2. Step 2

Split duckling through back, draw and remove spine, flatten hygienically. Season/oil, broil TEN-minute guide each side. Apply measured FINISHED No11 devilled butter; primary PDF p774 confirms printed No11 (OCR has “No. n”).

  3. Step 3

Coat with recorded crumbs and broil TWO more minutes each side, then continue to whole-bird centre82°C. Garnish recorded watercress, not unverified historical undercooking.
