Filippini Cranberry Sauce

Whole red cranberries cooked and mashed with sugar, then cooled for separate service.

Method

Steps

  1. Step 1

    Wash and sort the cranberries, removing spoiled or overripe fruit but retaining sound fruit regardless of whether it floats. Put the sound berries with the measured cold water in an enamelled or other suitable saucepan.

  2. Step 2

    Bring the water to a boil, add all the sugar and stir until mixed. Gently boil for about thirty minutes, stirring and mashing the berries with a wooden spoon until the sauce thickens.

  3. Step 3

    Transfer to clean shallow containers and cool promptly, then refrigerate until thoroughly cold. Spoon a serving portion into a separate clean sauce bowl; keep surplus refrigerated rather than claiming shelf-stable storage.
