Orange Rice Iced Pudding
First documentary adaptation of printed No1819; not physically cooked, measured or tasted. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1819. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Retain 74°C egg-custard heating without boiling and rapid chilling to≤4°C. Use only the No 42 external ice-and-rock-salt freezing method for the child orange-rice mixture; no parent custard formula or promised quart yield. Limites : Rice hydration, actual frozen output, quart-mould fill, churning duration and diners remain unknown. No parent 42 custard, straining of rice solids or claimed one-quart yield.
Method
Steps
Step 1
Combine 113 g raw medium-grain white rice, the CHOPPED rind and STRAINED juice of the SAME orange,946 mL milk,142 g sugar and half teaspoon vanilla essence. Mix and gently boil for the fifteen-minute guide until the rice is tender; retain the rice and chopped rind.
Step 2
Dilute SIX egg yolks with 118 mL cream. Add to the rice with ONE teaspoon culinary orange-flower water. Heat and stir WITHOUT BOILING for the five-minute guide, verifying 74°C in the egg-custard mixture. Remove from heat, put the pan in cold water to HALF its height and stir until cold, using the documented ice-bath and refrigeration assistance for rapid chilling to≤4°C.
Step 3
Use ONLY the No 42 freezing procedure: put this child mixture into a closed freezer vessel surrounded EXTERNALLY by cracked ice and rock salt. Churn until thoroughly firm, with thirty minutes as the historical guide. ICE AND ROCK SALT STAY OUT OF THE FOOD. Do not prepare or add the separate No 42 vanilla-custard ingredients.
Step 4
Pack the actual frozen mixture into one quart mould, cover tightly and re-bury in the same EXTERNAL ice-and-salt tub for the one-hour guide. Quart capacity does not guarantee yield: keep any surplus separately and do not invent a fill if short. Dip the mould briefly in tepid water, wipe its exterior and unmould onto a cold food-safe dish, without a food-contact napkin.
