Slow-Cooked Wheaten Grits

Coarse cracked-wheat wheaten grits gently boiled in water and milk until soft, with cold milk and soft sugar separately. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0131. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Select and record a food-grade wheaten-grits product. Use a heavy saucepan and a controlled low simmer, stirring frequently enough to prevent scorching; the printed ninety minutes remain a guide and the cereal must be fully soft. Refrigerate surplus promptly rather than leaving it at room temperature. Serve the cold dairy and sugar in clean separate vessels without inventing their volumes. Limites : This documented adaptation uses coarse cracked-wheat wheaten grits and cold milk for service. The service milk and sugar amounts are not specified. The printed 90 minutes is a guide until the grains are fully soft; absorption, cooked yield and diners remain unmeasured. No physical cooking trial is claimed.

Method

Steps

  1. Step 1

Use food-grade coarse cracked-wheat wheaten grits with distinct grains. Bring about 475 mL cold water, about 237 mL cold milk and one teaspoon salt to a boil in a heavy saucepan.

  2. Step 2

Stir in about 227 g dry grits. Reduce to a slow boil or simmer and cook for the printed ninety minutes as a guide, stirring the bottom often enough to prevent scorching, until the grains are fully soft. Adjust heat rather than assigning unprinted extra liquid.

  3. Step 3

Transfer to a clean hot serving dish. Offer cold milk and soft sugar separately; their amounts are not specified. Portion from the batch without assuming a fixed cooked yield.
