Ham Canapés
Small round toasts topped with a smooth cooked-ham spread, mustard and Worcestershire sauce.
Method
Steps
Step 1
Keep the fully cooked, ready-to-eat lean ham chilled until preparation. Put the ham in a mortar and pound for about ten minutes to a smooth pulp. Add the half ounce of butter, two tablespoons of Worcestershire sauce, half saltspoon of cayenne and half teaspoon of Dijon mustard. Pound together for about five minutes more, until smooth.
Step 2
Cut one round two inches across from each of six quarter-inch-thick slices of plain white bread. Toast the rounds until golden. Divide all the ham preparation evenly over the six toasts and shape each topping into a dome with a knife. Arrange on a clean dish and serve promptly.
