Tofu and Pork Rice Soup

Pork loin, tofu and rice simmer with carrot and onion. Sesame oil and spring onion are stirred in before the soup is served.

Steps

  1. Step 1

    Use dry white rice, weigh it before cooking and rinse it. Use drained firm tofu cut into 2 cm cubes. Dice the carrot and onion; slice the spring onion. Cut raw pork loin into 2 cm cubes on a separate board and clean hands and equipment.

  2. Step 2

    Heat the olive oil in a 5 litre saucepan over medium heat. Cook the onion and carrot for 5 minutes. Add the pork and cook for 4 minutes, turning; it will finish cooking in the broth.

  3. Step 3

    Add 2200 ml water and the rice once. Bring to a boil, partially cover and simmer for 12 minutes. Add the tofu and simmer for 6–10 minutes more, until the rice is tender and thick pork pieces reach 71°C internally on a clean digital thermometer.

  4. Step 4

    Stir in the sesame oil and spring onion. Divide into six substantial bowls and serve hot.
