Method

Steps

  1. Step 1

Stem, wash and drain ONE PINT strawberries; marinate with TWO OUNCES powdered sugar, HALF TSP vanilla essence, ONE TSP rum and TWO TBSP water FIFTEEN MINUTES. Printed “(No. 32)” after vanilla is a wrong cross-reference to sweetbreads, not an ingredient formula.

  2. Step 2

Beat EIGHT eggs with HALF GILL cream, TWO saltspoons salt and TWO TBSP sugar for TWO MINUTES.

  3. Step 3

In HALF OUNCE butter pan stir eggs TWO MINUTES, rest HALF MINUTE. Place ONE-QUARTER of strawberries at centre, fold two sides over, rest another HALF MINUTE.

  4. Step 4

Turn onto hot dish, apply separate TWO TBSP sugar and glaze with controlled food-safe broiler/caramelization instead of red-hot iron; arrange remaining THREE-QUARTERS fruit and juice around. Verify selected egg product safe (≥74°C or pasteurized soft-egg route).
