Feta and Spinach Salad with Cumin
Feta, spinach and thinly sliced raw courgette are dressed with cumin and parsley vinaigrette, with lemon wedges alongside.

Steps
Step 1
Wash and dry spinach, courgette and parsley. Thinly slice courgette, reserve a few slices and chop parsley. Crumble feta and cut washed lemon into wedges.
Step 2
Whisk all measured olive oil and vinegar with ground cumin and parsley. Toss spinach and remaining courgette with dressing, then gently fold in feta.
Step 3
Divide into two portions, top with reserved courgette slices and serve with lemon wedges.
