Bolognese Pan-Roasted Chicken with Potatoes

Chicken browned with prosciutto, garlic and rosemary, finished with tomatoes, then served with potatoes cooked in the same juices.

  1. Step 1

    Gather the ingredients: 1 professionally dressed chicken, about 1.3 kg, with head, neck, feet and internal organs removed; 1 tablespoon olive oil; 25 g butter; 40 g prosciutto with fat and lean, finely chopped; 1 small garlic clove, cut into a few pieces; 1 small rosemary sprig; 300 g ripe tomatoes, seeds removed and flesh cut into pieces; 600 g potatoes, peeled and cut into roughly 2 cm chunks; Salt and black pepper, used sparingly; A little hot water, only if the pan needs it.

  2. Step 2

    Pat the prepared chicken dry without rinsing it. Put it in a snug casserole with the olive oil, butter, finely chopped prosciutto, garlic pieces and rosemary. Brown over moderate heat, turning carefully, for about 15–20 minutes. Add only a little salt and pepper to taste because the prosciutto is seasoned.

  3. Step 3

    Add the seeded tomato pieces, cover loosely and cook gently, turning from time to time, until the chicken reaches at least 82°C in the thickest breast and thigh, about 50–70 minutes more. Add small spoonfuls of hot water only if the juices begin to scorch before the bird is cooked.

  4. Step 4

    Lift the cooked chicken onto a clean ovenproof dish, cover and keep hot in a low oven, with the food remaining at least 60°C, while cooking the potatoes. Remove the woody rosemary stem. Put the raw potato chunks into the tomato and chicken juices, cover and simmer for about 20–30 minutes until tender, stirring carefully and adding a little hot water as needed. These potatoes cook in the same pan juices, not in a separate pot.

  5. Step 5

    Return the chicken to the casserole with the potatoes and heat through thoroughly; check the chicken reaches at least 74°C when reheated. Remove any ties and carve, serving with the potatoes and tomato juices. For the tomato-paste alternative, replace the fresh tomatoes with 1½ tablespoons plain tomato paste dissolved in about 250 ml water and otherwise follow the same method.
