Heart-Shaped Bread Croutons
Small bread hearts lightly dripped with clarified butter and oven browned for use with another dish. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-0090. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Use a clean food-safe baking sheet rather than an unspecified tin plate. Spread cut hearts in one layer and use a restrained amount of clarified butter. Bake in a preheated hot oven, watching the colour rather than treating four minutes as a guarantee. Serve as a component only where the dependent recipe calls for these croutons. Limites : Bread slice size, crust trimming loss, number of hearts, clarified butter uptake, oven setting and actual browning time vary. A photo must not imply a measured crouton count or a separate complete meal. No physical baking or tasting is claimed.
Method
Steps
Step 1
Trim the six thin sandwich-bread slices. Cut the trimmed bread into small heart-shaped pieces with a cutter or knife; the book gives no number of hearts per slice.
Step 2
Spread the cut hearts in a single layer on a clean food-safe baking sheet. Drip a little clarified butter over them, without assigning an unprinted quantity.
Step 3
Place in a preheated hot oven for the printed four minutes as a guide. Watch closely and continue only as needed until the bread hearts are golden; remove promptly and use with the intended fish or other dependent dish.
