Six poached eggs over six No5 fish cakes with No736 cream sauce. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-2014. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Refrigerator-desalt fish, verify No5 cake centre74°C and select safe poached-egg route; source leaves poaching water/vinegar unquantified. Limites : No736 coverage, egg poach set and fish-cake actual mass unknown. Modern product adaptation is explicit. Product availability and manufacturer suitability must be checked at preparation, with no raw untreated substitute or measured cooking claim. Use only commercially pasteurized intact shell eggs labelled suitable for this soft-cooked service, keep refrigerated, use clean utensils and serve immediately. No home pasteurization or timed safety guarantee. If unavailable, this route is not executable; do not substitute ordinary untreated eggs.
Method
Steps
Step 1
Make SIX No5 fish cakes ONCE. Refrigerator-soak No5 salt cod sixteen hours with three water changes, drain, simmer in fresh water five minutes, debone/flake. Combine with 450g COOKED peeled mashed potato, its two eggs and seasonings; form SIX cakes, flour lightly, fry in butter about three minutes each side to safe 74°C centre. Produce exactly one parent six-cake batch. Keep warm safely.
Step 2
Poach SIX separately counted eggs in clean simmering water using these commercially pasteurized shell eggs suitable for soft-cooked service, with whites set and immediate service according to their label; no three-minute safety guarantee; adapting general No106 poach method is editorial, not printed No2014 quantity instruction. Drain and put ONE on each fish cake.
Step 3
Make No736 cream sauce once: heat butter/flour, whisk in hot milk/cream and seasonings one minute, boil two minutes. Measure actual safe FINISHED sauce for six child cakes; do not serve parent separately. Divide recorded finished sauce evenly over all six assemblies and serve safely hot.
