Method

Steps

  1. Step 1

Pound 85 g fresh HALIBUT flesh with ONE egg white, press through a sieve and chill the bowl on clean external ice; do not add ice to the food. Gradually mix in TWO tablespoons thick cream, ONE small truffle cut into small squares, HALF teaspoon anchovy paste, THREE saltspoons salt and ONE saltspoon cayenne.

  2. Step 2

Blanch FORTY-EIGHT shucked oysters in 473 mL boiling water for the THREE-minute guide and drain. Split each oyster meat, add the same fish force and close; actual cavity capacity and filling yield remain unknown.

  3. Step 3

Put oysters in 14 g butter with 59 mL white wine, TWO tablespoons sherry, ONE teaspoon salt and TWO saltspoons cayenne. Cover with ONE lightly buttered food-safe paper sheet; cover-butter amount is unspecified and SEPARATE from the 14 g pan butter. Braise gently for the SIX-minute guide, continuing until oysters reach 74°C and the fish-force centres reach at least 70°C. Remove oysters to the serving vessel and RESERVE their gravy.

  4. Step 4

Whisk the SEPARATE ONE tablespoon butter and ONE tablespoon flour with the reserved gravy and 118 mL cream; bring to the boil. Separately mix ONE pasteurized yolk equivalent, juice from ONE QUARTER lemon and the SEPARATE ONE tablespoon cream. Temper into the sauce, then heat gently for the ONE-minute guide WITHOUT boiling or curdling. Cloth-strain OVER the oysters and serve promptly.
