Omelette Varsovie

Eight-egg folded omelette with fresh crumbs browned in butter before eggs. Source : Alexander Filippini, The International Cook Book (1906), filippini-1906-1333. Adaptation documentaire ; illustration synthétique. Recette non cuisinée ni mesurée par cette campagne. Adaptations : Select 74°C egg-dish endpoint or approved pasteurized soft-egg route; historic brief mixing/rests do not prove safety. Limites : Fresh crumb moisture, pan heat, egg sizes, cooking time and finished omelette yield are unmeasured.
